The Unicorn

1.5 oz Ketel One Citron vodka
1 oz lemon juice
1 oz simple syrup
8 mint leaves
Ginger Beer 

Combine all ingredients, shake and strain over ice into a mason jar. Top off with ginger beer. 

Garnish: Lemon wedge
